
Smarter Kitchen: Rich & Creamy Shrimp and Mushroom Fettuccine

Here is a dish that isn’t for the crock pot but can be on the table in 30 minutes! This Rich & Creamy Shrimp and Mushroom Fettuccine is definitely a way to work smart in the kitchen and this is one of my kids favorite meals!
As most others, my recipes are inspired by recipes I have seen. I do not remember where I got the original recipe but I have added new ingredients, doubled the sauce recipe ingredients (almost) and added some other seasonings that I like. Since there is so much of me in this, I claim it as mine!
What really makes this sauce special is that it doesn’t have Parmesan Cheese like most Alfredo sauces have. Since Parmesan is a migraine trigger this is perfect and I use this sauce recipe as a replacement for Alfredo sauce.
Yes, 10 Tablespoons of butter is a lot of butter. For starters, I don’t recommend that you eat like that everyday. Treating yourself to a dish laden in yummy butter is perfectly acceptable on occasion.
This fettuccine dish is wonderful with some smoked sausage and/or zucchini and adding these takes this recipe over the top. The different flavors and textures in this single dish makes it pleasing to the tastebuds!

- 16 oz Fettuccine noodles
- 10 Tbsp Butter (Do not try with less!)
- 8 oz Baby portabella mushrooms Loosely chopped
- 1 Small Sweet onion Loosely chopped
- 1 1/2 tsp Garlic powder
- 6 oz Cream cheese Cut into small pieces
- 2 Tbsp Parsley
- 1 Tbsp Basil
- 1 Tbsp Italian Seasoning
- 1 Cup Boiling water from noodles
- 1 lb Shrimp Frozen, raw shrimp is fine, just thaw beforehand
- 1 lb Smoked Sausage Cut into 1” peices (optional)
- 1 medium Zucchini Cut into small pieces (optional)
- 2 tsp Blackened Seasoning (Optional)
- Salt & Pepper To taste

- Cook noodles in salted water until it reaches desired doneness. (Around 11 minutes)
- In a large skillet melt 2 tbsp of butter over medium heat and saute mushrooms and onions until soft and brown. Season with salt and pepper.
- Add remain butter and Add garlic powder, cream cheese, and seasonings. If using smoked sausage, zucchini or Blackened seasoning put that in the pot now. (Caution, this usually looks like a science project gone bad at this point so don’t give up) simmer this until cream cheese is melted.
- Pour 1 cup of water from noodle pot into the cream cheese mixture and stir until creamy. Use more water if sauce is too thick.
- Add the thawed shrimp to the mixture and simmer for 5-6 minutes while stiring occasionally to keep sauce from sticking.
! DO NOT OVERCOOK THE SHRIMP !

You can replace the shrimp with chicken. I have done that when I had some leftover rotisserie chicken or if I just didn’t have any shrimp.

Leave out the mushrooms and put in something you do like! It is one of the great things about this recipe…versatility!

No idea you had a recipe series, I will definitely be here to read more. I agree, nothing wrong with adding butter to your sauces, everything in moderation. This dish looks so good and I was so happy how easy it is to make. I’m gonna suggest this to my family. I like the idea of addding sausage and zucchini, perfect for our taste buds.

Leave out the mushrooms! This recipe is versatile! Maybe add some scallions or asparagus instead.

It doesn’t get creamy and adding more liquid doesn’t help. Like I said, don’t eat like that often but an occasional time won’t hurt you.
