Nothing says fall like some nice hot soup and nothing makes it easier like the slow cooker! They are the perfect combination to create a hearty meal for your family. This Zuppa Toscana recipe is a copycat recipe of the famous one from Olive Garden but I think it is so much better!

This recipe is supposed to have a little kick of spice but the hot Italian sausage is too much for me so I use the original flavor Italian sausage and add a tiny pinch of red pepper flakes for that touch of heat. You can make this to suite your family’s taste preferences. It is also versatile so play around with it and make it your own. I have even been known to chop up some baby bella mushrooms and add to the recipe!

Serve with some hot bread and dinner is ready!

Instructions
  1. Take the casings off of the Italian Sausage and break the links apart into pieces in a large Sauté pan, brown the Italian sausage. Add the minced garlic. Drain the excess grease and put meat in the slow cooker. Drain off the excess grease and put meat in the slow cooker.
  2. Put Diced Onion and Potatoes in the slow cooker.
  3. Add Butter, paprika, red pepper flakes (optional), salt & pepper and chicken broth. Add water if necessary to cover the potatoes.
  4. Cover and cook on low for 5-6 hours or on High for 3-4 hours. The potatoes should be soft.
Before Serving:
  1. Whisk the Heavy Whipping Cream and the flour until mixed well.
  2. Pour into the slow cooker, add kale and stir until well combined.
  3. Cover and cook on HIGH for 30 minutes until broth is slightly thickened.
Recipe Notes

*You can substitute Garlic Powder for the Minced Garlic. 1/2 tsp of Garlic Powder equals 2 cloves of garlic.
